Cooking output, Wednesday-Friday:
(Thanksgiving itself involved the kaddo bourani, the turkey, the gravy, the pumpkin ice cream; and, from other people, three pies, chopped brussels sprouts, roasted potatoes and other roots, pumpkin potato soup, salad, bread. We were worried because we forgot to make stuffing; needless to say, there was no need to worry.)
It's been a busy week.
- Kaddo Bourani, recipe courtesy of the brother of the president of Afghanistan (baked butternut squash; yogurt-mint sauce; meat sauce)
- One 12.5 lb turkey, recipe courtesy of kosher butcher Gary Kaplan
- Gravy, from the drippings of the turkey
- Turkey stock, with the neck, giblets, and bones of the turkey
- A small amount of chopped liver, with the liver and fat of the turkey
- Pumpkin ice cream (well, OK, frozen pumpkin custard, since the ice cream maker refused to freeze it)
- Mint syrup
- Ginger syrup
